panino ca meuza: this iconic spleen sandwich is palermo’s boldest specialty, cherished by locals at historic friggitorie around the capo and vucciria markets. thin slices of spleen and lung are slow-cooked, then sizzled in fragrant lard and tucked into a soft bun, often with a sprinkle of caciocavallo cheese. adventurous and deeply traditional, it tells the story of nose‑to‑tail cooking and centuries of working‑class ingenuity.
